  • 2 lbs potatoes, peeled and chopped
  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 1/4 cup unsalted butter
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until fork-tender. Drain and set aside.

  2. In a small saucepan, heat the garlic and milk over low heat until warm.

  3. Using a potato masher or hand mixer, mash the potatoes with the warmed milk and garlic mixture until smooth.

  4. Stir in the butter, fresh parsley, and fresh thyme.

  5. Season with salt and pepper to taste and serve hot.
