  • 2lbsgold potatoes
  • 1cupbeef broth
  • 4tbspcream cheese
  • 4tbspunsalted butter
  • 4tbspgarlic,roasted
  • 4tbspfresh herbs,such as basil, chives, rosemary, oregano, etc, minced
  • 2tspsalt
  • freshly ground pepper

Instructions

  1. Clean potatoes and cut into 1-inch sized pieces. Cook in covered pot over medium heat in broth for about 30 to 40 minutes, until very tender. Alternatively, cook on high pressure in electric pressure cooker for 12 minutes.

  2. Add cream cheese, butter, roasted garlic, herbs, salt and pepper to cooked potatoes and mash together until well blended. Add additional salt and pepper, if needed.
