  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup erythritol
  • 1/4 cup softened butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F.

  2. In a bowl, mix together almond flour, coconut flour, erythritol, baking powder, and salt.

  3. In a separate bowl, beat butter until creamy.

  4. Add in egg and vanilla extract, mix well.

  5. Slowly add in the dry ingredients to the wet mixture.

  6. Scoop the dough by tablespoonful onto a lined baking sheet.

  7. Bake for 10-12 minutes or until edges are golden.

  8. Let cool before serving.
