How To Make Dairy-Free Vegetable Curry

Ingredients
- 2 cups cauliflower florets
- 1 cup carrots, sliced
- 1 cup green beans, cut into 1-inch pieces
- 1 cup peas
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon turmeric powder
- 1 can coconut milk
- 1 tablespoon vegetable oil
- Salt, to taste
- Fresh cilantro leaves, for garnish
Instructions

Heat vegetable oil in a large pot over medium heat. Add onions, garlic, and ginger. Sauté until onions are translucent.

Add curry powder and turmeric powder. Stir well to coat the onions and spices.

Add cauliflower florets, carrots, green beans, and peas to the pot. Mix well to evenly distribute the spices.

Pour in the coconut milk and add salt. Stir everything together.

Cover the pot with a lid and let the curry simmer for about 25-30 minutes, or until the vegetables are tender.

Serve the dairy-free vegetable curry over rice or with naan bread. Garnish with fresh cilantro leaves.
