Ingredients

  • 4 cups ripe fresh peaches, peeled and sliced
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, combine sliced peaches, sugar, vanilla extract, and cinnamon. Mix well.

  3. In a separate bowl, combine all-purpose flour, brown sugar, baking powder, and salt. Mix well.

  4. Add almond milk and melted coconut oil to the flour mixture. Mix until thoroughly combined.

  5. Pour the mixture over the peaches in the large bowl. Mix well.

  6. Pour the peach mixture into a baking dish and bake for 40 minutes, or until the top is golden brown and the peaches are tender.

  7. Serve warm and enjoy!
