- 6 fresh peaches, peeled, pitted, and sliced
- 1/2 cup granulated sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup boiling water
Instructions

Preheat the oven to 375°F (190°C). Grease a 9-inch square baking dish.

In a large bowl, combine the sliced peaches, 1/2 cup of granulated sugar, lemon juice, vanilla extract, cinnamon, and nutmeg. Stir until the peaches are well coated. Pour the peach mixture into the prepared baking dish.

In a separate bowl, combine the flour, 1/4 cup of granulated sugar, brown sugar, baking powder, and salt. Cut in the cold cubed butter using a pastry cutter or your hands until the mixture resembles coarse crumbs. Sprinkle this mixture evenly over the peaches.

Pour the boiling water over the top of the cobbler. This will create a delicious syrup as it bakes.

Bake the cobbler in the preheated oven for 45 minutes, or until the top is golden brown and the peaches are bubbling.

Remove from the oven and let it cool slightly before serving. Serve warm with a scoop of vanilla ice cream or whipped cream.
