Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 2 cups beef broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves minced garlic
  • 2 bay leaves
  • 1 tbsp tomato paste
  • Salt and pepper to taste

Instructions

  1. Heat olive oil over medium-high heat in a dutch oven or large pot.

  2. Add the beef and cook until browned on all sides.

  3. Add the vegetables and garlic and cook until softened.

  4. Add the tomato paste and stir until combined.

  5. Add the beef broth and bay leaves and bring to a boil.

  6. Reduce the heat and let the stew simmer for 1-2 hours, or until the beef is tender.

  7. Serve hot, and enjoy!
