Ingredients

  • 1.5 pounds beef stew meat, cubed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 1 cup mushrooms, sliced
  • 4 cups beef broth
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the beef stew meat and brown on all sides. Remove the meat from the pot and set aside.

  2. In the same pot, add the onion and garlic. Cook until the onion becomes translucent.

  3. Add the carrots, celery, and mushrooms to the pot. Cook for a few minutes until slightly softened.

  4. Return the beef stew meat to the pot and pour in the beef broth. Add the bay leaf, tomato paste, dried thyme, and paprika. Season with salt and pepper.

  5. Bring the stew to a boil, then reduce heat to low. Cover and simmer for 2 hours, stirring occasionally.

  6. Remove the bay leaf before serving. Garnish with fresh parsley.
