How To Make Apple & Walnut Cake with Treacle Icing
A deliciously moist apple and walnut cake with a sweet treacle icing.

Ingredients
- 2 apples, peeled and diced
- 1 cup walnuts, chopped
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- ½ cup buttermilk
- For the treacle icing:
- ¼ cup unsalted butter
- ½ cup brown sugar
- 2 tbsp treacle
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.

In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Mix until just combined. Fold in the diced apples and chopped walnuts.

Pour the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pan for 10 minutes. Transfer to a wire rack to cool completely.

In a small saucepan, melt the butter for the treacle icing over medium heat. Stir in the brown sugar and treacle until smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Remove from heat and let cool for a few minutes.

Drizzle the treacle icing over the cooled cake, allowing it to run down the sides. Let the icing set before serving.
