How To Make Pan-fried Cod with Champ
Flaky cod has a satisfying mild and milky taste that is unlike any other. Not to mention, it tastes great beside healthy veggies like artichokes and chickpeas. Ingredients
- 4 cod fillets
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 4 cups mashed potatoes (prepared)
- 2 cups spring onions (chopped)
- Salt and pepper to taste
Instructions

In a shallow dish, combine the flour, salt, and black pepper. Dredge the cod fillets in the flour mixture, shaking off any excess.

Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the cod fillets and cook for 3-4 minutes per side or until golden brown and cooked through. Remove from the skillet and set aside.

In the same skillet, melt the remaining butter. Add the chopped spring onions and sauté for 2-3 minutes until tender.

To serve, spoon a generous portion of mashed potatoes onto each plate. Top with a cod fillet and drizzle with the sautéed spring onions. Season with salt and pepper to taste.
