  • 4 eggs
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup diced ham
  • 1/4 cup diced red bell pepper
  • 1/4 cup chopped spinach
  • 4 pre-made mini pie shells

Instructions

  1. Preheat oven to 375°F.

  2. In a mixing bowl, whisk eggs, milk, salt, pepper, and Parmesan cheese.

  3. Add diced ham, red bell pepper and spinach. Mix well.

  4. Pour mixture evenly into the mini pie shells.

  5. Bake for 25-30 mins, or until the filling is set and the crust is golden brown.
