Ingredients
- 1 butternut squash, peeled, seeded, and sliced into rounds
- 2 tbsp of butter
- 2 tbsp of brown sugar
- 1 tsp of thyme leaves
- Salt and pepper to taste
- 1 sheet of puff pastry, thawed
- 2 oz of goat cheese
- Fresh arugula, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a large skillet, melt the butter over medium heat. Add the butternut squash rounds and cook for 5 minutes on each side, until golden brown.

Sprinkle the brown sugar over the squash and let it dissolve. Cook for another 2 minutes, until the sugar caramelizes.

Remove the skillet from the heat and sprinkle the thyme leaves, salt, and pepper over the squash.

Roll out the puff pastry sheet on a lightly floured surface. Place it over the squash, tucking in the sides.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.

Remove from the oven and let it cool for a few minutes. Carefully invert the tart onto a serving platter.

Crumble the goat cheese over the top and garnish with fresh arugula.
