How To Make Pumpkin Ravioli with Brown Butter and Sage Recipe
Homemade ravioli filled with delicious pumpkin mixture, served with fragrant brown butter and sage sauce.

Ingredients
- 2 cups of all-purpose flour
- 3 eggs
- 1/2 cup of pumpkin puree
- 1/2 cup of ricotta cheese
- 1/4 cup of grated Parmesan cheese
- 1/4 tsp of nutmeg
- 1/4 tsp of salt
- 1/2 stick of unsalted butter
- 6-8 fresh sage leaves
- Salt and pepper to taste
Instructions

In a mixing bowl, combine flour with 2 eggs and salt. Mix until dough forms.

Knead for 5 minutes, then wrap in plastic and let rest for 30 minutes.

In another mixing bowl, combine pumpkin, ricotta, Parmesan cheese, nutmeg, salt, and pepper.

Roll out the dough into thin sheets and cut into circles. Place 1 tablespoon of the filling on a sheet of dough, and cover it with another sheet. Seal the edges tightly.

Cook ravioli in salted water for 2-3 minutes until they rise to the surface.

In a large skillet, melt butter and fry sage leaves until golden brown.

Add the cooked ravioli to the pan, turning them to coat with butter sauce.

Serve hot with grated Parmesan cheese on top.
