How To Make White Chocolate & Berry Pudding

Ingredients
- 200g white chocolate, chopped
- 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
- 1 ½ cups milk
- ½ cup heavy cream
- ¼ cup granulated sugar
- 2 tablespoons cornstarch
- 2 eggs
- 1 teaspoon vanilla extract
Instructions

In a saucepan, heat the milk and cream over medium heat until it starts to simmer. Remove from heat.

In a separate bowl, whisk together the sugar and cornstarch. Add the eggs and vanilla extract, and whisk until smooth.

Slowly pour the hot milk mixture into the egg mixture, whisking constantly.

Return the mixture to the saucepan and cook over low heat, stirring continuously, until it thickens and coats the back of a spoon (about 5-7 minutes).

Remove from heat and add the chopped white chocolate. Stir until melted and well combined.

Place the mixed berries in serving glasses or ramekins. Pour the white chocolate pudding over the berries.

Refrigerate for at least 2 hours, or until set.

Serve chilled and garnish with additional fresh berries, if desired.
