How To Make Summer Berry Terrine

This sweet, delectable dessert is the perfect ender to any and every heavy meal! In fact, it’s great even as a stand-alone snack. Ingredients

  • 2 cups mixed berries (such as strawberries, blueberries, raspberries)
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tbsp water
  • 1 1/2 tsp powdered gelatin
  • 1 1/2 cups Greek yogurt
  • 1/4 cup honey
  • Fresh mint leaves, for garnish

Instructions

  1. In a saucepan, combine the mixed berries, sugar, lemon juice, and water. Cook over medium heat until the berries release their juices and become slightly syrupy, about 5 minutes.

  2. Remove from heat and let cool slightly.

  3. In a small bowl, sprinkle the gelatin over 1 tbsp of water and let it bloom for 5 minutes.

  4. Gently fold the bloomed gelatin into the warm berry mixture until dissolved.

  5. In a separate bowl, whisk together the Greek yogurt and honey until smooth.

  6. Line a loaf pan with plastic wrap, allowing enough overhang to cover the top later.

  7. Pour half of the berry mixture into the bottom of the loaf pan. Top with half of the yogurt mixture.

  8. Repeat with the remaining berry and yogurt mixtures, creating layers.

  9. Use a spatula to smooth the top, cover with the plastic wrap, and refrigerate for at least 4 hours or until set.

  10. To serve, remove the terrine from the pan by lifting the plastic wrap. Slice and garnish with fresh mint leaves.
