Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 1/2 cups whole milk
  • 2 teaspoons vanilla extract
  • Whipped cream, for topping
  • Crushed peanuts, for garnish

Instructions

  1. In a large saucepan, whisk together the peanut butter, sugar, cornstarch, and salt.

  2. Gradually whisk in the milk until smooth.

  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.

  4. Continue to cook for 1-2 minutes, then remove from heat.

  5. Stir in the vanilla extract.

  6. Pour the pudding into individual serving dishes and refrigerate for at least 2 hours, or until set.

  7. Top with whipped cream and garnish with crushed peanuts before serving.
