How To Make Sweet Tamales with Pineapple and Coconut

Ingredients
- 2 cups masa harina
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1/2 cup pineapple chunks
- 1/4 cup shredded coconut
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup pineapple juice
- Corn husks, soaked in water
Instructions

In a large bowl, combine the masa harina, sugar, butter, baking powder, and salt. Mix well.

Gradually add the pineapple juice to the masa mixture, stirring until it forms a soft dough.

Take a soaked corn husk and spread a thin layer of the masa mixture onto it, leaving a border around the edges.

Place a few pineapple chunks and shredded coconut in the center of the masa mixture.

Fold the sides of the corn husk towards the center, enclosing the filling, and then fold up the bottom.

Repeat until all the masa mixture and filling are used.

Place the tamales in a steamer or a large pot with a steamer basket.
