Serves:

Ingredients

  • 1/2 cup of pineapple juice
  • 1/2 cup of coconut milk
  • 1/4 cup of unsalted butter, softened
  • 1 egg
  • 1/4 cup of sugar
  • 1 tsp of salt
  • 3 cups of bread flour
  • 2 tsp of active dry yeast
  • 1/2 cup of sweetened shredded coconut
  • 1/2 cup of chopped pineapple

Instructions

  1. Add the pineapple juice, coconut milk, butter, egg, sugar, salt, flour, and yeast to the bread machine in the order recommended by the manufacturer.

  2. Select the dough cycle and start the machine.

  3. When the cycle is complete, remove the dough from the machine and knead it for a minute on a floured surface.

  4. Add the coconut and pineapple to the dough and knead until they are evenly distributed.

  5. Shape the dough into a loaf and place it in a greased loaf pan. Cover with a damp towel and let rise for 30 minutes.

  6. Preheat the oven to 350°F and bake the bread for 30-35 minutes or until golden brown.

  7. Let the bread cool for 10 minutes before slicing and serving.
