Ingredients

  • 1 9-inch unbaked pie crust
  • 1 cup all-purpose flour
  • 1/2 cup packed dark brown sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup molasses
  • 1/2 cup boiling water
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, combine the flour and brown sugar. Cut in the cold butter until the mixture resembles coarse crumbs.

  3. Take out 1/2 cup of the flour mixture and set it aside for the crumb topping.

  4. In another bowl, mix together the molasses, boiling water, and baking soda until well combined.

  5. Pour the molasses mixture into the unbaked pie crust.

  6. Sprinkle the reserved crumb topping evenly over the molasses mixture.

  7. Bake the pie in the preheated oven for 40-45 minutes, or until the filling is set and the crust is golden brown.

  8. Allow the pie to cool before serving.
