How To Make Lime Meringue Pie

Ingredients
- 4 large eggs, separated
- 1 cup of granulated sugar
- 1/3 cup of fresh lime juice
- Zest of 2 limes
- 1/4 cup of cornstarch
- 1/4 teaspoon of salt
- 1 1/2 cups of graham cracker crumbs
- 5 tablespoons of unsalted butter, melted
- 1/4 teaspoon of cream of tartar
Instructions

Preheat the oven to 350°F (175°C).

In a medium bowl, whisk together the egg yolks, sugar, lime juice, lime zest, cornstarch, and salt.

In a separate bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch pie dish to form the crust.

Bake the crust for 10 minutes, then remove from the oven and let it cool.

Meanwhile, beat the egg whites and cream of tartar in a clean, dry bowl until soft peaks form.

Gradually add 1/4 cup of sugar and continue beating until stiff peaks form.

Pour the lime filling into the cooled crust and spread it evenly.

Spoon the meringue on top of the filling, making sure to seal the edges.

Bake for 15 minutes or until the meringue is lightly golden.

Remove from the oven and let it cool completely before serving.
