How To Make Vegan Key Lime Pie

- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1 can (14 oz) full-fat coconut milk
- 1/2 cup fresh key lime juice
- 1/4 cup agave syrup
- 1/4 cup cornstarch
- Zest of 1 lime
- Coconut whipped cream and lime slices, for garnish
Instructions

In a mixing bowl, combine graham cracker crumbs, melted coconut oil, and maple syrup. Press the mixture into a 9-inch pie dish to form the crust.

In a saucepan, whisk together coconut milk, key lime juice, agave syrup, and cornstarch. Cook over medium heat until the mixture thickens, about 5 minutes, stirring constantly.

Remove from heat and stir in lime zest. Pour the filling into the prepared crust.
