Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1 can (14 oz) full-fat coconut milk
  • 1/2 cup fresh key lime juice
  • 1/4 cup agave syrup
  • 1/4 cup cornstarch
  • Zest of 1 lime
  • Coconut whipped cream and lime slices, for garnish

Instructions

  1. In a mixing bowl, combine graham cracker crumbs, melted coconut oil, and maple syrup. Press the mixture into a 9-inch pie dish to form the crust.

  2. In a saucepan, whisk together coconut milk, key lime juice, agave syrup, and cornstarch. Cook over medium heat until the mixture thickens, about 5 minutes, stirring constantly.

  3. Remove from heat and stir in lime zest. Pour the filling into the prepared crust.

  4. Refrigerate for at least 4 hours or until set.

  5. Serve chilled, topped with coconut whipped cream and lime slices.
