Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 4 limes, juiced and zested
  • 400g condensed milk
  • 3 egg yolks
  • 1 tsp vanilla extract
  • whipped cream and lime slices, for garnish

Instructions

  1. Crush the digestive biscuits into fine crumbs. Mix with melted butter and press into a greased pie dish to form the crust.

  2. In a bowl, combine lime juice, lime zest, condensed milk, egg yolks, and vanilla extract. Whisk until well combined.

  3. Pour the lime mixture over the biscuit crust and smooth the top with a spatula.

  4. Bake in a preheated oven at 180°C (350°F) for 15 minutes or until the filling is set.

  5. Allow the pie to cool completely, then refrigerate for at least 2 hours or until chilled.

  6. Serve chilled with a dollop of whipped cream and lime slices for garnish.
