  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3/4 cup Key Lime juice
  • 1 can (14 oz) sweetened condensed milk
  • 3 egg yolks
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Lime zest, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into the bottom and sides of a 9-inch pie dish.

  3. In another bowl, whisk together Key Lime juice, sweetened condensed milk, and egg yolks until smooth. Pour the mixture into the prepared crust.

  4. Bake for 15-20 minutes until the pie is set but still slightly jiggly in the center. Allow it to cool completely.

  5. In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form. Spread the whipped cream over the cooled pie.

  6. Refrigerate for at least 2 hours before serving. Garnish with lime zest before serving.
