Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup melted butter
  • ¼ cup granulated sugar
  • 3 lemons, juiced and zested
  • 1 can condensed milk
  • 4 egg yolks
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into a pie dish to form the crust.

  3. Bake the crust in the preheated oven for 8-10 minutes, then remove and let it cool.

  4. In another bowl, whisk together the lemon juice, lemon zest, condensed milk, egg yolks, heavy cream, and vanilla extract until well combined.

  5. Pour the lemon filling into the cooled crust.

  6. Bake the pie in the preheated oven for 18-20 minutes until set but still slightly jiggly in the center.

  7. Remove the pie from the oven and let it cool completely before refrigerating for at least 2 hours or overnight.

  8. Serve chilled with a dollop of whipped cream on top.
