  • 1 cup grated carrots
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a large mixing bowl, whisk together the oil, eggs, granulated sugar, brown sugar, and vanilla extract until well combined.

  3. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Fold in the grated carrots and chopped walnuts, if using.

  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.

  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
