How To Make Spiced carrot & apple muffins

These muffins are a delicious combination of spicy carrot and sweet apple flavors, perfect for a morning treat or afternoon snack.

Ingredients

  • 1 cup grated carrot
  • 1 cup grated apple
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

  3. In a separate bowl, combine the grated carrot, apple, vegetable oil, milk, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Stir in the chopped walnuts, if desired.

  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.

  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
