  • 1 cup all-purpose flour

  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup grated zucchini
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large bowl, mix together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, cinnamon, and salt.

  3. In a separate bowl, whisk together the milk, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Fold in the grated zucchini and blueberries.

  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Allow the muffins to cool for a few minutes in the tin, then transfer to a wire rack to cool completely.
