Ingredients

  • 200g dark chocolate, chopped
  • 1 cup heavy cream
  • 1/4 cup prune juice
  • 1 tsp vanilla extract
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 1/4 cup water

Instructions

  1. In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Set aside to cool slightly.

  2. In a separate bowl, whip the heavy cream until stiff peaks form. Set aside.

  3. In another bowl, combine the prune juice and vanilla extract. Set aside.

  4. In a small saucepan, whisk together the egg yolks, granulated sugar, and water. Cook over low heat, stirring constantly, until thickened.

  5. Gradually pour the egg mixture into the melted chocolate, whisking constantly until well combined.

  6. Fold in the whipped cream until fully incorporated.

  7. Gently fold in the prune juice mixture until smooth and well combined.

  8. Divide the mousse among 4 serving glasses or bowls.

  9. Refrigerate for at least 4 hours, or until set.

  10. Serve chilled and enjoy!
