  • 200g dark chocolate, chopped
  • 4 eggs, separated
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Instructions

  1. Melt the chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let it cool slightly.

  2. In a large bowl, whisk the egg yolks, sugar, salt, and vanilla extract until pale and creamy.

  3. In a separate bowl, whip the heavy cream until stiff peaks form.

  4. Gently fold the melted chocolate into the egg yolk mixture until well combined.

  5. Fold in the whipped cream until fully incorporated.

  6. In another clean bowl, beat the egg whites until stiff peaks form.

  7. Gently fold the beaten egg whites into the chocolate mixture until no streaks remain.

  8. Divide the mousse into serving glasses or bowls.

  9. Refrigerate for at least 2 hours or overnight to set.

  10. Serve chilled and garnish with whipped cream or grated chocolate, if desired.
