Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 cup creamy peanut butter
  • Salt and pepper to taste
  • Optional toppings: Shredded cheese, chopped scallions, sour cream

Instructions

  1. In a large pot, brown the ground beef over medium heat.

  2. Add the onion, garlic, and bell pepper to the pot and sauté until the onion is translucent.

  3. Stir in the diced tomatoes, kidney beans, chili powder, cumin, and paprika.

  4. Bring the mixture to a simmer and let it cook for 20-30 minutes, stirring occasionally.

  5. Stir in the peanut butter until it is fully incorporated into the chili.

  6. Season with salt and pepper to taste.

  7. Serve the peanut butter chili hot, garnished with your choice of toppings.
