  • 1 cup of cashew nuts, roughly chopped
  • 1 tsp of ground cinnamon
  • 1/4 cup of honey
  • 1/4 cup of coconut oil, melted
  • 1 tsp of vanilla extract
  • 1/4 tsp of salt

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking dish with parchment paper.

  2. In a large bowl, combine the oats, cashew nuts, ground cinnamon, and salt.

  3. In a separate small bowl, mix together the honey, melted coconut oil, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and mix until well combined.

  5. Press the mixture firmly into the prepared baking dish, smoothing the top with the back of a spoon.

  6. Bake for 20 minutes, or until golden brown and crisp around the edges.

  7. Remove from the oven and let it cool completely before cutting into squares.
