How To Make Date Nut Pinwheel Cookies II
Make a fresh batch of everyone’s favorite dessert! With these cookie recipes, you can bake all kinds of different sweet treats. Make a classic snack with chocolate chip cookies. Or, switch it up by adding nuts, raisins, and other ingredients to keep things interesting.

Ingredients
- 1 cup of dates, pitted and chopped
- 1/2 cup of nuts, finely chopped (such as walnuts or pecans)
- 1/4 cup of sugar
- 1/4 cup of water
- 1/4 teaspoon of vanilla extract
- 1 1/4 cups of all-purpose flour
- 1/2 cup of unsalted butter, softened
- 1/4 cup of powdered sugar
Instructions

In a small saucepan, combine the dates, nuts, sugar, water, and vanilla extract. Cook over medium heat until the mixture thickens, stirring constantly. Remove from heat and let cool.

In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Gradually add in the flour and mix until a dough forms.

On a floured surface, roll out the dough into a rectangle about 1/4 inch thick. Spread the date and nut mixture evenly over the dough.

Starting from one of the long sides, tightly roll the dough into a log. Wrap in plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Slice the chilled dough log into 1/4 inch thick rounds and place them on the prepared baking sheet.

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
