Ingredients

  • 3 eggs
  • 1/2 cup granulated sugar
  • 1/2 teaspoon almond extract
  • 1/2 cup all-purpose flour
  • 1/4 cup almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sliced strawberries
  • 1/4 cup powdered sugar, for dusting
  • For the cheesecake filling:
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.

  2. In a mixing bowl, beat the eggs and granulated sugar until light and fluffy. Stir in the almond extract.

  3. In a separate bowl, combine the all-purpose flour, almond flour, baking powder, and salt. Gradually add the dry ingredients to the egg mixture and fold until well combined.

  4. Pour the batter into the prepared cake pan and spread it evenly. Bake for 25-30 minutes or until the cake springs back when lightly touched.

  5. Meanwhile, prepare the cheesecake filling. In a mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

  6. Once the cake has cooled, remove it from the pan and slice it in half horizontally. Spread the cheesecake filling on the bottom half of the cake and arrange the sliced strawberries on top.

  7. Place the other half of the cake on top and dust with powdered sugar. Serve chilled.
