  • 4 eggs
  • 1 cup of almond flour
  • 1/2 cup of erythritol (or any sugar substitute)
  • 1/2 cup of unsalted butter, melted
  • 1 tsp of vanilla extract
  • 1 tsp of baking powder
  • 1/4 tsp of salt
  • Sugar-free strawberry jam, for filling
  • Fresh berries, for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans.

  2. In a large mixing bowl, whisk the eggs until light and fluffy.

  3. Add the almond flour, erythritol, melted butter, vanilla extract, baking powder, and salt. Mix until well combined.

  4. Divide the batter evenly between the prepared cake pans and smooth the tops.

  5. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.

  6. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.

  7. Once the cakes are completely cool, spread sugar-free strawberry jam on one cake layer and place the other cake layer on top.

  8. Decorate with fresh berries on top.
