How To Make Sugar-Free Victoria Sponge
This sugar-free Victoria sponge is a delicious and guilt-free treat. It is light, fluffy, and perfect for those watching their sugar intake.

Ingredients
- 4 eggs
- 1 cup of almond flour
- 1/2 cup of erythritol (or any sugar substitute)
- 1/2 cup of unsalted butter, melted
- 1 tsp of vanilla extract
- 1 tsp of baking powder
- 1/4 tsp of salt
- Sugar-free strawberry jam, for filling
- Fresh berries, for topping
Instructions

Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans.

In a large mixing bowl, whisk the eggs until light and fluffy.

Add the almond flour, erythritol, melted butter, vanilla extract, baking powder, and salt. Mix until well combined.

Divide the batter evenly between the prepared cake pans and smooth the tops.
