Ingredients
- 6 large sweet potatoes
- 2 sticks butter
- 2 cups granulated sugar
- 1 tbsp cinnamon
- 1 tbsp nutmeg, ground
- 1 tbsp pure vanilla extract
- salt, to taste
Instructions
- Peel the sweet potatoes and cut them into cubes.
- Melt the butter in a heavy skillet and add the sweet potatoes.
- Mix the sugar, cinnamon, nutmeg, and salt.
- Cover the sweet potatoes with the sugar mixture and stir.
- Cover, reduce heat to low and cook for about an hour or until the potatoes are soft and "candied". Stir occasionally during cooking. They should be tender and a little hard around the edges.
- Just before serving, add the vanilla and stir.
