How To Make Strawberry & Elderflower Gateau

- 200g strawberries, hulled and sliced
- 200ml elderflower cordial
- 250g mascarpone cheese
- 250ml heavy cream
- 50g powdered sugar
- 1 tsp vanilla extract
- 200g ladyfinger biscuits
- Fresh mint leaves, for garnish
Instructions

In a bowl, combine the sliced strawberries and elderflower cordial. Let it macerate for at least 15 minutes.

In another bowl, beat the mascarpone cheese until smooth.

In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Gently fold the whipped cream into the mascarpone cheese.

Dip the ladyfinger biscuits into the strawberry and elderflower mixture, then layer them in a serving dish.

Spread a layer of the mascarpone cream mixture on top of the biscuits.

Repeat the layers, alternating between the biscuits and cream mixture until all ingredients are used. Finish with a layer of cream on top.

Refrigerate for at least 2 hours to allow the flavors to meld together.
