Ingredients

  • 10 elderflower heads
  • 1.2 kg granulated sugar
  • 1 lemon, sliced
  • 2 tablespoons white wine vinegar
  • 4 liters water
  • 4 glass bottles with stoppers

Instructions

  1. Shake the elderflower heads to remove any insects or debris.

  2. In a large pot, dissolve the sugar in the water over medium heat.

  3. Add the elderflower heads, lemon slices, and white wine vinegar to the pot.

  4. Bring the mixture to a gentle boil and simmer for 15 minutes.

  5. Remove from heat and let the mixture cool completely.

  6. Strain the liquid through a muslin cloth or fine sieve into a clean jug.

  7. Pour the elderflower champagne into the glass bottles, leaving a bit of headspace.

  8. Seal the bottles tightly with stoppers and store in a cool dark place for at least 3 days.

  9. After 3 days, open a bottle and check if it has enough fizz. If not, let it sit for another day or two.

  10. Serve chilled in champagne flutes and enjoy!
