Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 1 cup canned cherries, drained
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 cup chocolate shavings

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

  2. In a medium bowl, whisk together the flour, baking powder, salt, cocoa powder, and granulated sugar.

  3. In a separate large bowl, cream together the butter, eggs, and vanilla extract until light and fluffy. Gradually add the dry ingredients, alternating with the milk, mixing well after each addition.

  4. Divide the batter evenly between the prepared pans and smooth the tops. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

  5. Once the cakes are cooled, slice each cake in half horizontally to create four layers. Place one layer on a serving plate and spread a layer of drained cherries on top. Repeat with the remaining layers.

  6. In a chilled mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the top and sides of the cake. Sprinkle with chocolate shavings.

  7. Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld together.

  8. Slice and serve the Black Forest gateau, and enjoy!
