Ingredients

  • 150g self-raising flour
  • 125g unsalted butter, softened
  • 125g caster sugar
  • 2 large eggs
  • 1 tsp almond extract
  • 50g ground almonds
  • 150g fresh raspberries
  • Flaked almonds, for garnish
  • Icing sugar, for dusting

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line a round cake tin.

  2. In a large bowl, cream the butter and sugar together until light and fluffy.

  3. Beat in the eggs, one at a time, followed by the almond extract.

  4. Gently fold in the flour and ground almonds until well combined.

  5. Spoon half of the batter into the prepared cake tin and spread evenly.

  6. Scatter half of the raspberries on top of the batter. Repeat with the remaining batter and raspberries.

  7. Bake in the preheated oven for 40-45 minutes, or until a skewer inserted into the center comes out clean.

  8. Remove from the oven and allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

  9. Once cooled, garnish with flaked almonds and dust with icing sugar.

  10. Serve and enjoy!
