Ingredients

  • 1 cup butternut squash, peeled and cubed
  • 1 cup almond meal
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup raspberry jam
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.

  2. Steam the butternut squash until tender, then mash it with a fork or blend it until smooth.

  3. In a mixing bowl, combine the almond meal, flour, sugar, melted butter, milk, vanilla extract, baking powder, and salt. Stir well.

  4. Spread half of the batter into the prepared baking dish, pressing it evenly.

  5. Spread the raspberry jam over the batter, then spoon the mashed butternut squash on top.

  6. Sprinkle the sliced almonds over the butternut squash layer.

  7. Pour the remaining batter over the almonds and spread it evenly.

  8. Bake in the preheated oven for 45-50 minutes, or until golden brown and set.

  9. Allow to cool completely before cutting into bars.

  10. Serve and enjoy!
