  • 3 eggs
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup lemon juice
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

  2. In a large mixing bowl, beat the eggs until fluffy and pale yellow.

  3. Gradually add the sugar while continuing to beat the eggs.

  4. In a separate bowl, combine the flour, baking powder, and salt. Add this dry mixture to the egg mixture, alternating with the lemon juice and zest, until fully incorporated.

  5. Pour the batter into the prepared cake pan and bake for 25 minutes, or until a toothpick inserted into the center comes out clean.

  6. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  7. Once cooled, dust the cake with powdered sugar before serving.
