  • 1 cup old-fashioned oats
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking pan.

  2. In a small bowl, combine oats and boiling water. Let stand for 10 minutes.

  3. In a large mixing bowl, cream together the butter and sugars until light and fluffy.

  4. Beat in the eggs one at a time, followed by the vanilla extract.

  5. In a separate bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the butter mixture, mixing well after each addition.

  6. Stir in the oat mixture until well combined.

  7. Pour the batter into the prepared baking pan and smooth the top.

  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
