How To Make Orange & apricot loaf cake

Ingredients
- 2 oranges, zest and juice
- 1 cup dried apricots, chopped
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/2 cup powdered sugar (for glaze)
Instructions

Preheat the oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.

In a bowl, combine the flour, baking powder, and salt. Set aside.

In another bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.

Gradually add the dry ingredients to the butter mixture, alternating with the milk and orange juice. Mix until just combined.

Fold in the orange zest and chopped apricots.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

In a small bowl, whisk together the powdered sugar and enough orange juice to make a pourable glaze. Drizzle the glaze over the cooled cake.
