How To Make Parsnip Pancakes with Honey & Mustard Dressing

Ingredients
- 2 large parsnips, peeled and grated
- 2 eggs
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 1/4 cup honey
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
Instructions

In a large mixing bowl, combine the grated parsnips, eggs, flour, baking powder, salt, and black pepper. Stir well until fully combined.

Heat the vegetable oil in a large non-stick skillet over medium heat. Spoon about 1/4 cup of the parsnip mixture onto the skillet for each pancake. Flatten with a spatula and cook for about 3-4 minutes on each side, until golden brown and crispy.

In a small bowl, whisk together the honey, Dijon mustard, and apple cider vinegar to make the dressing.

Serve the parsnip pancakes hot, drizzled with the honey & mustard dressing. Enjoy!
