Ingredients

  • 1 cup cooked polenta
  • 1/2 cup cooked ham, diced
  • 1/2 cup frozen peas, thawed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked polenta, diced ham, thawed peas, grated Parmesan cheese, breadcrumbs, beaten egg, and salt and pepper. Mix well.

  2. Heat the olive oil in a skillet over medium heat.

  3. Shape the polenta mixture into small round cakes and place them in the heated skillet. Cook for about 3-4 minutes on each side, or until golden brown.

  4. Remove the polenta cakes from the skillet and serve hot.
