How To Make Orange Polenta Cake

Ingredients
- 2 oranges
- 3/4 cup of polenta
- 1 cup of almond flour
- 1/2 cup of granulated sugar
- 1 tsp of baking powder
- 1/4 tsp of salt
- 3 eggs
- 1/3 cup of olive oil
- Zest of 1 orange
Instructions

Preheat the oven to 350°F (175°C) and grease a round cake pan.

Finely zest both oranges and set aside.

Cut the oranges in half and squeeze the juice into a bowl.

In a separate bowl, combine the polenta, almond flour, sugar, baking powder, and salt.

In a large mixing bowl, beat the eggs and olive oil until well combined.

Gradually add the dry ingredients to the egg mixture and mix until just combined.

Stir in the orange zest and 1/2 cup of the orange juice.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
