Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 eggs
  • ½ cup molasses
  • ½ cup hot water
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.

  2. In a bowl, whisk together the flour, ground ginger, baking powder, and baking soda.

  3. In a separate large bowl, cream together the softened butter and brown sugar until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the molasses.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with the hot water. Mix until just combined.

  6. Pour the batter into the prepared cake pan and smooth the top.

  7. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  9. Once cooled, dust with powdered sugar if desired.

  10. Slice and serve.
