Ingredients

  • 1 cup mixed dried fruits (such as raisins, currants, and chopped dates)
  • 1/4 cup candied cherries
  • 1/4 cup candied citrus peel
  • 1/4 cup chopped nuts (such as almonds or walnuts)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 cup milk
  • 1/4 cup rum or brandy (optional)
  • Icing sugar for dusting

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and line a 6-inch round cake tin with parchment paper.

  2. In a bowl, mix together the dried fruits, cherries, citrus peel, and nuts.

  3. In a separate bowl, cream the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.

  4. In another bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and ginger.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

  6. Stir in the dried fruit and nut mixture, and the rum or brandy (if using).

  7. Pour the batter into the prepared cake tin and smooth the top with a spatula.

  8. Bake for 1 hour or until a toothpick inserted into the center comes out clean.

  9. Remove from the oven and let cool in the tin for 10 minutes. Then transfer to a wire rack to cool completely.

  10. Once cooled, dust the top of the cake with icing sugar.

  11. Serve and enjoy the fruity Christmas cake!
