Ingredients

  • 175g currants
  • 175g sultanas
  • 175g raisins
  • 75g candied peel
  • 50g glacé cherries
  • 100ml brandy, plus extra for feeding
  • 175g unsalted butter, softened
  • 175g dark brown sugar
  • 3 large eggs
  • 200g plain flour
  • 1 tsp mixed spice
  • 1 tsp ground cinnamon
  • 50g ground almonds
  • Zest of 1 orange
  • Zest of 1 lemon
  • 50g blanched almonds, chopped
  • 50g pecans, chopped

Instructions

  1. Preheat the oven to 140°C (275°F). Line the base and sides of a 20 cm (8 inch) round cake tin with baking parchment.

  2. In a large bowl, mix together the currants, sultanas, raisins, candied peel, and glacé cherries. Pour over the brandy, cover, and leave to soak overnight.

  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, adding a tablespoon of flour with each egg to prevent curdling.

  4. Sift in the remaining flour, mixed spice, and cinnamon. Add the ground almonds, orange zest, and lemon zest. Stir until well combined.

  5. Drain any excess brandy from the soaked fruits and fold into the cake batter. Stir in the chopped almonds and pecans.

  6. Spoon the mixture into the prepared cake tin and smooth the top. Bake in the preheated oven for 4 hours, or until a skewer inserted into the center comes out clean.

  7. Leave the cake to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.

  8. Once the cake is cooled, use a skewer to prick the top and pour over a little extra brandy for added moisture and flavor. Repeat this feeding process every week leading up to Christmas.
