Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cherry preserves
  • 2 cups vanilla ice cream
  • 1/2 cup whipped cream
  • 1/4 cup chocolate shavings

Instructions

  1. Preheat oven to 375°F (190°C) and line a 12×16 inch baking sheet with parchment paper.

  2. In a large bowl, whisk together eggs and sugar until light and fluffy.

  3. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.

  4. Gradually add the dry ingredients to the egg mixture, folding gently until fully combined.

  5. Pour the batter onto the prepared baking sheet and spread evenly.

  6. Bake for 12-15 minutes, or until the cake is set and springs back when lightly touched.

  7. Remove from the oven and let cool for 5 minutes.

  8. Carefully transfer the cake to a clean kitchen towel and roll up tightly. Let cool completely.

  9. Unroll the cake and spread cherry preserves evenly over the surface.

  10. Place scoops of vanilla ice cream along one end of the cake and roll up tightly.

  11. Wrap the rolled cake in plastic wrap and freeze for at least 2 hours, or until firm.

  12. Before serving, unwrap the roll and place on a serving platter. Top with whipped cream and chocolate shavings.

  13. Slice and serve chilled.
